Happy 2012 Leap Year and I will start with another recipe (Peanut Butter Soup)!!!

Happy 2012!!!! 2011 was an interesting year. I had my second child...a bouncing baby girl!!!! She is soo lovable. I adore her. She was born Sept 10!!!


Well, I should give my recipe. This food is a good fulfilling dish that is originally from my boyfriends country, Ghana. He taught me how to cook it. I hope you enjoy it! Peace Love and Blessings!!!!! 
Peanut Butter Soup Recipe
3 tomatoes
4 chicken breasts
1 onion
1 shrimp maggi
4 tablespoons of peanut butter
1 teaspoon garlic salt
1 teaspoon salt
2 teaspoons black pepper
4 cups of water
African ground pepper(depends on how spicy you want it)

This dish can also be cooked with beef too but I prefer chicken! How much seasoning you use is up to you. I recommend you use a medium-large pot. Cook the meat thoroughly with seasoning and onion in pot. Add water. Place whole tomato into pot and bring to boil. Take tomatoes out of pot and place in blender with 4 tablespoons of the water from pot. Be careful of the hot water that you are handling. Blend the tomatoes until it becomes smooth and place back into water. Remember to stir occasionally. Get the 4 tablespoons of peanut butter and place in blender and add 2 tablespoons of the water from pot. Blend until smooth. Add peanut butter paste back into pot.  Remember to stir. You can add more seasoning if you think its not enough. Stir occasionally. Cook for 45 minutes. Serve with 2-4 cups of rice on the side.  If you like African food you can eat it with fufu.

Okay! How ya' doing? The title of this post is things that  I want to do before I die. I've never made a list before so this should be fun!

1. Skydive
2. Open a college fund for my son
3. Get a breast augmentation...my breasts hang too low but they are not small
4. Go on a cruise
5. Travel to a different continent
6. Visit the Grand Canyon
7. Go to Las Vegas again...I went as a kid so that doesn't count
8. Go on a hot air balloon ride
9. Learn how to cook Indian food
10. Visit the White House
11. Learn a new language
12. Go skiing or snowboarding
I just came up with this list now. I know I will add more later! Thanks for reading my bucket list.
